The foundation of this emulsion lies in high-altitude goat milk, sourced from a historic pasture 2,000 feet above the valley. High-altitude grasses contain a high concentration of aromatic clover and wild thyme, which pass directly into the fat globules of the milk, yielding a herbal complexity that is impossible to replicate synthetically.
We ferment the fresh curds for ninety days in cold stone crocks. This slow cold-ripening technique allows enzymes to break down proteins into intensely savory amino acids, creating a depth of flavor that is both sharp and round. We then dilute this heavy cheese with a clean dashi broth made from sun-dried kelp.
The magic happens in the culinary siphon. By charging the mixture with nitrous oxide under extreme pressure, we force gas into the fat layers. When released, the emulsion blooms into macro-bubbles of intense, savory cheese flavor. It balances the deep, caramelized woods of our beets with a bright, saline lift that keeps the palate refreshed.
